All animal products are sourced from local producers with third-party verified animal welfare standards.
All teas and coffees are served in partnership with Fair Trade USA.
We work with local farms to purchase their "visually imperfect" fruits and vegetables that would otherwise be discarded.
We limit waste by partnering with our biologists to feed a variety of animals here at the Academy.
The Academy Café and The Terrace are proud to be Certified Green Restaurants. The Green Restaurant Association (GRA) is a United States non-profit organization that provides certification for restaurants to become more environmentally responsible. Since 1990, the GRA has been building an extensive database of environmental goals for the restaurant industry. They rate existing restaurants and food service operations with points in seven environmental categories- water efficiency, waste reduction and recycling, sustainable furnishings and building materials, sustainable food, energy, disposables, chemical and pollution reduction. Green Restaurant Certification allows diners to be able to rely on their favorite restaurant’s environmental claims and communicates credibility.
The Monterey Bay Aquarium Seafood Watch® program helps seafood buyers make choices for healthy oceans. Their recommendations suggest which seafood items are “Best Choices,” “Good Alternatives,” and which seafood to “Avoid.” We are committed to sourcing our seafood in ways that minimize damage to ocean and freshwater environments. We proudly follow the recommendations of the Monterey Bay Aquarium Seafood Watch® program.
